魚類都建議需要烹煮熟透後再食用,避免食物中毒或寄生蟲感染,像是食用未煮熟的淡水魚,會增加感染中華肝吸蟲(Clonorchis sinensis)的風險。中華肝吸蟲寄生於人體肝膽,可能引發嚴重的健康問題。因此,為了自身健康,食用淡水魚前務必徹底煮熟。
而中華肝吸蟲的成蟲寄生在淡水魚的膽管內,而其卵則隨著魚的糞便排入水中。卵在水中孵化成毛蚴,再侵入特定的淡水螺體內發育。因此,淡水環境為中華肝吸蟲的整個生命週期提供了必需的條件。而深海的環境條件與淡水環境差異極大,水溫低、壓力高、食物來源相對較少,不適合中華肝吸蟲的生存和繁殖。
