電鍋料理│瓜子肉燥-How to make shallot pork sauce

Making delicious shallot pork sauce rice is a convenience that is my favorite food in Taiwan.






The first step is to prepare the materials.
1. Leading role=About one hundred NT dollars ground meat
2. condiment=a jar of canned seeds, a few soy sauce, a spoonful of rice wine
3. Remove the smell and soft the meat =onions 300g (a bowl),a little lotus root powder, three of garlic.






The second step is to make the sauce
Put the ground meat on the disk, a half sauce of canned  into the ground meat, and than the seeds cuts and put in the ground meat.
將絞肉置放於盤中,將瓜子罐頭的一半醬汁倒入絞肉中,瓜子倒出切塊且放於絞肉上。

肉毒桿菌Clostridium botulinum

「臘腸桿菌」即為「肉毒桿菌」(Clostridium botulinum),喜歡生長在沒有氧氣及低酸的環境,且蛋白質能提供良好的生長基質,真空包裝的香腸就是肉毒桿菌很好的生長環境;而生食海鮮雖然也有可能有其他病菌,但和肉毒桿菌的繁殖環境不太符合,所以肉毒桿菌通常不會在海鮮繁殖。
Clostridium botulinum, commonly known as botulinum toxin, thrives in oxygen-free and low-acid environments, and protein provides an excellent growth medium. Vacuum-sealed sausages create an ideal breeding ground for botulinum toxin. While raw seafood can harbor other pathogens, it generally does not provide the optimal conditions for botulinum toxin growth due to its different environmental factors

肉毒桿菌會產生神經毒素,進而阻斷神經傳導,導致視力模糊、複視、眼瞼下垂、吞嚥困難、口齒不清、便秘、腹脹、肌肉麻痺,嚴重者甚至會呼吸衰竭死亡。
Botulinum toxin blocks nerve signal transmission, leading to symptoms such as blurred vision, double vision, drooping eyelids, difficulty swallowing, slurred speech, constipation, bloating, and muscle paralysis. In severe cases, it can cause respiratory failure and death.

所以食用真空包裝的罐頭食品,要注意衛生,並保存在低溫環境下,若罐頭已經有膨脹或變形一定要直接丟棄,且於食用前要充分加熱,中心溫度最好達到75℃以上,並保持良好的衛生習慣,確實避免食物交叉感染。
When consuming vacuum-sealed canned food, it's crucial to prioritize hygiene and store them in a cool environment. If a can is bulging or deformed, discard it immediately. Before consumption, ensure that the food is heated thoroughly to a core temperature of at least 75°C (167°F). Additionally, maintain strict hygiene practices to prevent cross-contamination.

肉毒桿菌中毒的潛伏期: 通常為12-72小時,但可長達8天。
The incubation period for botulism is typically 12 to 72 hours but can be as long as 8 days.

肉毒桿菌抗毒素確實是治療肉毒桿菌中毒的重要手段,但它只能中和尚未與神經結合的毒素,無法逆轉已經發生的神經損傷。
因此,及早發現、及早治療對於預後非常重要。
Botulinum antitoxin is indeed a crucial treatment for botulism, but it can only neutralize the toxin that has not yet bound to nerve cells. It cannot reverse the neurological damage that has already occurred. Therefore, early detection and prompt treatment are essential for a favorable prognosis.

另外嬰兒的腸道環境較易滋生肉毒桿菌,因此不建議一歲以下嬰兒食用蜂蜜。
Additionally, infants' intestinal environments are more prone to botulinum toxin growth, therefore, it is not recommended for infants under one year old to consume honey.





混入適量醬油、蔥、蓮藕粉、米酒、蒜
Mixed with a little soy sauce, lotus root powder, rice wine and Spring onion, minced garlic into.









攪拌

C.Finally, we cook the shallot pork sauce.
1.將電鍋外放入一碗水。

3.按下烹煮按鈕
Press the cook button

Time is up, the fragrant shallot pork sauce completed, and I can eat when I reheated it, that is a good fine food in Taiwan.
